The objective of this opportunity is to create a food and beverage 'anchor' as part of the placemaking and cultural development described in the PS800 million City of Salford and University masterplan for the regeneration of the "historic" area around the University campus. Consumer interest for a wide range of high-quality beers, with genuine local provenance, is thriving in Manchester and across the North West. In order to support success in the UK small brewing industry, there is a need to balance the positive opportunities created by consumer trends with the need to innovate in the industry. Inspired by the Salfordian brewer James Joule, we propose to create a successful microbrewery that integrates all aspects of the university: student experience, research and innovation whilst producing a high quality, commercially available product. The brewing facility will sit alongside an artisan, craft bakery which produces naturally leavened bread. The facility will operate as one entity.
