The cafe operator will have specific knowledge and previous significant experience of working within established museum or gallery venues. The applicant must be able to demonstrate an understanding of the importance of working in close partnership with the venue, as the cafe forms part of the same premises and will largely be viewed by the public as part of the venue, and not necessarily be discerned to be a separate business concern. This is an exciting opportunity to operate a cafe inside a prestigious arts venue, on a busy street in the heart of Scotland's capital city. At this stage, the Council is evaluating basic suitability to operate the cafe concession.
