The food and beverage operation is intrinsic to the ongoing success of the museum, helping visitors further their enjoyment of the museum with an enjoyable dining experience and helping to drive non-traditional museum audiences to the venue. The strategic objectives of this procurement are to: - To create a space that encourages visitors to the museum to dwell in the city following their visit. - To provide a hub for residents in and around Perth to gather and feel connected to their community. - To maximise on the opportunities afforded by the purpose-built cafe space, creating an inspiring and welcoming environment that will promote both the concession and the museum and its focus on the provision of an exceptional visitor experience. - To provide our visitors (local, national, and international) with an exceptional culinary experience that celebrates local and Scottish produce and suppliers,. through targeting a 100% Scottish supplier base and, for products that can be grown or produced in Scotland, 80% of food and drink from Scottish growers and producers. - To provide an income stream which supports the long term sustainability of this free to visit museum. Renewal: The initial period of the contract will run for 3 years from the commencement date with the option to extend for a further 1 x 2 year period, followed by a further 1 x 2 year period subject to satisfactory operation and performance.
