Notice Description

The catering provider (CP) is to assist the MDJV in the planning & design of the kitchen within the Maria Fidelis (MF) accommodation block. This is to include; * Kitchen size & configuration * Location of serving hatches * Mechanical & electrical (M&E) requirements The MDJV will terminate the agreed M&E services within the kitchen to which the CP will connect their equipment to. The CP is to design the M&E scheme within the kitchen, provide, install and maintain all catering equipment within the kitchen. This is to also include extract systems and fire suppression systems. The CP is to provide catering services to reflect the projects requirements. Initially this will be between 7am - 4pm Monday to Friday. The requirement will increase to include Saturdays and possibly Sundays & nights. The CP is to ensure that all staff provided are trained to a minimum level 2 hygiene standard in health and safety. The CP is to also provide competent fire marshals within their team. The CP is to ensure that food safety management procedures are based on HACCP principles. The CP is to ensure that sufficient staff are provided at all times to ensure that a speedy and efficient service is provided to reflect the projects requirements. The CP is to register the kitchen with the local authority and ensure that a 4-star rating is maintained. The CP is to provide catering services to an anticipated 2500 individuals (at the peak of the project) in a canteen facility based on 3 sittings. The CP is to provide an extensive menu with a wide selection of hot and cold food and beverages to meet the nutritional and dietary needs of the site operatives and staff. This provision is to also include a healthy option and cater for those with special dietary needs such as gluten free & Halal with all offerings being fairly priced. The CP is to provide personnel to clear tables within the canteen and to clean & disinfect the tabletops between sittings. The seats and table legs etc will be cleaned by separate MDJV provided resources. Due to the duration of the project, the CP will be required to carry out regular deep cleans of the facilities that they are responsible for. The CP is responsible for cleaning of the kitchen area in line with statutory requirements along with the provision of & storage of all cleaning materials in line with associated management processes (COSHH). The canteen provision will be provided rent, rates & services free. The CP will be required to provide renumeration in the form of catering services such as; * Provision of free meals to support safety initiatives on site * Sandwiches and buffets to support key meetings & workshops on the project. * Other catering offers to support the project - scope to be developed.
